The Center helps develop and coordinate Jewish Studies course offerings at UNCA.  Courses regularly include Hebrew for General Education I and II, History of Judaism, and Introduction to the Hebrew Bible.  Other courses include Women in the Bible, The Holocaust and the Arts, Holocaust Literature, Modern Jewish Writers, History of Jerusalem, What Is Israel?, and Women in American Jewry.  The CJS has also offered informal, not-for-credit courses as part of its occasional adult institute.
